My cats are scared of everything?

At 3 years old it will be difficult, they should have been socialised as kittens, and handled then. One of the cats is becoming to trust you that is a start. When you are feeding them stay in the room, but don't touch, try those fishing type toys on a long string. Let the cats come round themselves, don't force attention on them. I have found on occasion a cat will come to someone who ignores them and doesn't force eye contact, which a cat finds threatening. It may take a while for them to trust, but you seem to be doing all right so far.
